Chocolate Layer Stack
Tasty layers
Lots of fun to make and great to eat. I so wanted to make something different for a gathering I was attending. This just popped into my head. It's two layers of brownie like cake separated by a chocolate filling topped with whipped cream and a warm raspberry sauce.

Ingredients

Cake
1/2 cup of melted butter 1 ounce of unsweetened chocolate 1 tablespoon of unsweetened cocoa 1 cup of granulated sugar 1 teaspoon of vanilla 2/3 cup of all purpose flour 2 eggs

Filling
2 ounces of unsweetened chocolate 3 tablespoons of unsweetened cocoa 1 tablespoon of butter 6 tablespoons of butter 1/2 cup confectioners sugar 1 extra large egg

Topping
1 cup of your favorite whipped cream 1/4 cup seedless raspberry jam 1/4 cup of raspberries or another 1/4 cup of jam 1/2 tablespoon of semisweet chocolate chips

1 Grease and flour a 9 x 13 inch pan and preheat oven to 350 degrees.
2 In a small heavy sauce pan melt butter, chocolate and cocoa.
3 In a large mixing bowl stir together sugar, flour and eggs using a large wooden spoon.
4 Pour chocolate mixture into eggs mixture, add vanilla and mix thoroughly . Then pour batter into pan and bake for 20 minutes. Remove from oven and let cool. Once cooled cut into 2 x 4 inch pieces and set aside.
5 To make filling melt chocolate, cocoa and 1 tablespoon of butter in a double boiler and set aside.
6 In a large mixing bowl of an electric mixer combine butter and sugar. Then blend in chocolate mixture. Once thoroughly mixed, beat in egg at high speed for 1 to 2 minutes
7 For the raspberry toping place jam and berries into a small sauce pan and heat while stirring until berries are combined with jam and mixture is warmed. Do not boil. Remove from heat, add chips and stir until chips are melted into sauce.
8 You are mow ready to make your stacks. Place one of the cake pieces on a desert plate. Cover the top with filling then place another piece on top. Cover the second piece with filling and cover with another piece. Top with whipped cream and spoon on chocolate raspberry sauce.
